Abstract Food processing allows a wide variation in the final quality of the product, which directly depends on the quality of the raw material used, the processing conditions, storage and commercialization. Salting, for example, is one of the oldest methods used to preserve meat. In the meat industry, the incorporation of salts into products is commonly used to improve dietary functionality and ensure food safety. Thus, the objective of this review was to understand that the discarded matrix meat can be used to make jerky meat, adding value to the final product. The processing of jerked beef is based on the osmotic dehydration process in counter flow, promoted by the penetration of salt with consequent exit of water from the inter and extra fibrillar compartments to the surface, with subsequent drying. At the same time, myosin denaturation occurs as a result of high temperatures, as well as myoglobin oxidation, promoted by salt, increasing the susceptibility to protein oxidation. The use of discarded animal meat to make jerky adds value to the by-product, improving sensory quality.

ABSTRACT The soil seed bank is used as a tool for recomposition of degraded areas, through the improvement and establishment of species, succession and increased biological diversity. Thus, the work evaluated the seed bank of two areas of the Parque estadual Mata da Pimenteira – PEMP and the effect of environmental conditions on seed germination, and their potential for implantation in degraded areas. Soil and litter were collected in two areas (Serra Branca and Pimenteira), which were homogenized, trays and subjected to 70% shading or sun. Seedlings were accounted for and identified. In addition, it determined the density, porosity and speed of basic infiltration (VIB) in the soil in both areas. The emergency relationship, depending on the seed bank and packaging, was evaluated by descriptive and graphical response surface statistics. The relationship between emergence and soil characteristics was observed through correlation. Pimenteira's seed bank showed the highest rate of emergence and diversity. In addition, shading enhances material regeneration. In this context, the insertion of these nuclei-shaped sections in the restoration sectors of the park itself is a potential strategy.

RESUMO O banco de sementes do solo é utilizado como ferramenta de recomposição de áreas degradadas, por meio da melhoria e estabelecimento de espécies, sucessão e aumento da diversidade biológica. Dessa forma, o trabalho avaliou o banco de sementes de duas áreas do Parque Estadual Mata da Pimenteira – PEMP e o efeito das condições ambientais na germinação das sementes, e seu potencial para implantação em áreas degradadas. Para isso, foram coletados solo e serapilheira em duas áreas (Serra Branca e Pimenteira), os quais foram homogeneizados, distribuídos em bandejas e submetidos a sombreamento 70% ou sol. As plântulas foram contabilizadas e identificadas. Além disso, determinaram-se a densidade, porosidade e velocidade de infiltração básica (VIB) no solo nas duas áreas. A relação de emergência, em função do banco de sementes e acondicionamento, foi avaliada por estatística descritiva e gráfica de superfície de resposta. A relação entre a emergência e as características do solo foi observada através de correlação. O banco de sementes da Pimenteira apresentou maior índice de emergência e diversidade. Além disso, o sombreamento potencializa a regeneração do material. Nesse contexto, a inserção dessas porções em forma de núcleos nos setores de restauração do próprio parque configura-se como uma estratégia potencial.

Resumo O umbuzeiro (Spondias tuberosa arr. Câmara) é uma espécie endêmica do semiárido brasileiro. O umbu é muito apreciado, com importância socioeconômica e significativa diversidade de atributos de qualidade. O objetivo deste estudo foi explorar as variações colorimétricas entre matrizes de umbu e avaliar a correlação entre os principais atributos biométricos de qualidade. Com isso, foram explorados frutos de 14 matrizes no estádio de maturação comercial, submetidos à análise colorimétrica (a*, b*, C* e L*) e determinação de parâmetros biométricos (massa do fruto, comprimento, largura, forma, firmeza, percentuais de casca, semente, polpa e rendimento). Os parâmetros colorimétricos foram avaliados pelo teste de média Scott-Knott e pela obtenção de dendrograma; e os biométricos, submetidos à análise de correlação linear. Observou-se que na casca predomina o verde, em comparação à polpa, e os menores índices de luminosidade (L*) consistiram nos frutos com casca pilosa, e a saturação (C*) apresentou relação direta com o parâmetro b*; além disso, o dendrograma indicou a formação de quatro grupos entre as matrizes. A análise de correlação dos parâmetros biométricos apresentou tendências significativas importantes. Os resultados reforçaram que os parâmetros avaliados podem conferir uma importante ferramenta na seleção e no controle de qualidade, pois as características exigidas mudam conforme a finalidade comercial.

Abstract The umbu tree is an endemic species and is found in the Brazilian semi-arid. Umbu is highly appreciated for its socioeconomic importance and significant diversity of quality attributes. This study aims to explore the color-related variations between umbu matrices, and to evaluate the correlation between the main biometric attributes of quality. With this, 14 matrices were explored at the commercial ripening stage and submitted to colorimetric analysis (a*, b*, C* and L*) and determination of biometric parameters (fruit mass, length, width, shape, firmness, percentages of peel, seed, pulp, and yield). The colorimetric parameters were evaluated by the Scott-Knott mean test and dendrogram, and biometrics were submitted to linear correlation analysis. It was observed that in the peel green predominates, compared to the pulp, and the lowest luminosity indexes (L*) consist of the fruits with hairy peel. The saturation (C*) has a direct relationship with parameter b*; in addition, the dendrogram indicates the formation of four groups between the matrices. The correlation analysis of biometric parameters showed significant tendencies. Therefore, the results reinforce that the parameters evaluated can provide an important tool in selecting and quality control these fruits, since the required characteristics change according to their commercial purpose.
